Locus of heat resistance (LHR) contributes to global stress tolerance in bacteria, including extreme heat resistance. LHR E. coli in meat poses a food safety concern. Therefore, this study screened for (LHR) among meat borne E. coli isolated from different stages of meat processing. Further, this study presents a complete genome sequencing and comparative analysis of these heat resistant bacteria to provide clearer understanding of stress resistance mechanisms.
